Imhotep, an Egyptian priest and physician who lived about 2000 years ago, talks about a mass formed in the breast in a text he wrote and describes the cancer finding in palpation. Hippocrates, who lived about 2000 years after him and said that almost every disease started in the intestines and gave the disease its name, made a prediction that went beyond the ages and said: He said, "Cancer cannot be cured with surgery, maybe it can be treated with medicinal plants and nutrition."
Avicenna, the most famous physician of the East, who lived between 980 and 1037 AD, approximately 1500 years after Hippocrates, used the expression "a disease that is difficult to treat" for cancer.
So why do people get cancer? Could this question have been answered in the history of mankind? The famous physician Galen (130-210 AD) from Pergamon, based on the Greek medical tradition, said that the increase in black bile and melancholy were associated with this disease. In other words, he said that it stems from a state of physical and spiritual contamination in the body. If we carry the subject up to date and open it up a bit, insecticides, pesticides, heavy metals, fungicides and many similar chemical toxins taken into the body with food can be counted as physical pollution. As we mentioned at the beginning of our article, cancer has been seen as a disease that has plagued our species since ancient times, probably since the existence of human beings in this world. But why do humans get cancer? Let's start with Hippocrates first. What did this physician, whose aphorisms transcend the ages, say? “All diseases start in the gut”. In my opinion, Hippocrates is very right. That is, each grain of wheat was planted and yielded seeds again, and the farmers were separating some of the product as seeds. Two important discoveries were made about wheat in the nineteenth century. First, the wheat flour is separated from its bran and germ and turned into pure white flour. In other words, it was started to be refined, and then yeast originating from mushrooms, which today is described as instant yeast, was discovered in America. The dough that was fermented with this yeast swelled much faster and became ready to be baked. However, there was a very important difference between sourdough and instant yeast. The gliadin molecule, which is one of the proteins that make up the gluten protein in the dough fermented with sourdough, was broken down by the probiotic bacteria in this yeast, and therefore gluten was formed in very small amounts. However, this was not the case with instant yeast, and the carbon dioxide gas formed as a result of the breakdown of starch made the dough rise quickly. The increase in gluten molecules in bread, the loss of prebiotic fibers in bread, and the inability to take enough vitamins and trace elements that can be easily taken from bread started to cause homeostasis in the body to deteriorate much more easily. Of course, it was a process of at least 40-50 years before the negative effects of such a diet began to become visible in human life.
Approximately 30-50 years after the spread of bread made with pure white flour baker's yeast (fenni yeast) in the United States, cancer rates began to increase. Especially with the genetic changes made in wheat in the 1940s, the increase in cancer rates has increased with the consumption of bread made with baker's yeast from white flour, whose gluten content has increased.
